Pumpkin Curry with Chicken
When you are bored of your usual chicken curry, you can give it a twist with the use of pumpkin. Pumpkin Curry with Chicken has a unique taste that is quick to make and has rich flavours. It is a perfect recipe to serve when you have guests at home along with steamed rice or tawa paratha.

Ingredients

  • 400 grams chicken breast, cut into small pieces
  • 500 grams yellow pumpkin
  • an inch piece of ginger, 5 grams
  • 1 onion, 45 grams 3 cloves garlic 5 grams
  • 2 green chilli, 5 grams
  • 1 teaspoon cumin powder 5 grams
  • 1 teaspoon red chilli powder 5 grams
  • 3/4 teaspoSaffola Masala & Coriander Oats Stuffed Ragda Pattieson turmeric powder 3 grams
  • 1 teaspoon coriander powder 5 grams
  • 1 teaspoon garam masala 5 grams
  • 1/2 cup tomato puree 110 ml
  • 40 grams Saffola Peppy Tomato Oats
  • Salt as required
  • A small bunch of coriander leaves,10 grams
  • Saffola Active Oil for cooking 5 ml
  • 1 cup water 200 ml
  • How to make Pumpkin Curry with Chicken

  • To prepare the Pumpkin Curry With Chicken, heat oil in a heavy bottomed pan.
  • Add the crushed garlic, onion, ginger, green chillies and chopped pumpkin. Sprinkle some salt and stir them for about a minute, cover the pan and simmer until the pumpkin has softened.
  • Using a hand blender, blend the pumpkin into a puree while it is in the pan. Add the tomato puree, the oats, all the remaining spices and the chicken pieces.
  • Add a cup of water, cover the pan, turn the heat to low and cook until the chicken is cooked completely about 15 minutes.
  • Adjust the consistency of the curry by adding more water, if required, and also adjust the spices to suit your taste. Once done, turn off the heat.
  • Stir in the chopped coriander leaves and serve.
